Alternative Sugar Cookie Recipe Help Needed! Thanks!

Hey all!

I was hoping some of you fabulous alternative bakers could help me out.

My mother in law lives in the bush in Alaska. She gets all her groceries from a jumper plane, delivered about 2 weeks after she orders them. This means no eggs, no butter, and only powdered milk. Ok, now comes the dilemma. Her birthday is at the end of the month, and she really really really wants some sugar cookies - rolled out, cut into shapes, and frosted.

SO, my question to you is do you have a recipe that you use that has substitutes for both eggs and milk (and it can't be refrigerated egg substitute, or soy milk, etc. since it has to be mailed in).

In my opinion, it would be super fantastic if I could send her some sugar cookie mixes (like betty crocker or pillsbury or something) and have her be able to add something to it (like applesauce?) and stilll be able to roll the cookies out.

Anyone have any ideas?

Canola oil or coconut oil both work well in place of butter in baked goods, and neither needs to be refrigerated. As for the eggs, there is a powdered egg replacer that does not need to be refrigerated: EnerG. It works really well in baked goods, but won't do at all for things like scrambled eggs, souffle, meringue, etc.

I think these suggestions would work well with a boxed mix, but it's always a good idea to try it out. Good luck!

I have heard that avocado can be substituted for butter but research indicates that cooked avocado is bitter. Has anybody else heard of this or tried it?

Flax meal mixed with water will work as an egg replacer (1 Tbs flax mixed with 3 Tbs hot water). But, for sugar cookies I agree EnerG Egg Replacer will probably work best. Sometimes applesauce can be used in place of either fat or egg.

If you convert a recipe using one of these replacers it's important to pick one that only uses one or two eggs.

Vegan blogs would be a good place to look for recipes might be able to use.
