I am falling in love with Vietnamese food and would like to learn to make it on my own. Does anyone have a good cookbook you could recommend? It would be nice if it were vegetarian friendly, but I can always make adaptations.
I've heard The Secrets of the Red Lantern is a great Vietnamese cookbook. I don't have it myself (yet), but it's at the top of my wishlist and I've heard great things about it, from both Vietnamese and non-Vietnamese food bloggers.

I would recommend Into the Vietnamese Kitchen by Andrea Nguyen. She has a website you could also check out http://www.vietworldkitchen.com/. Another one that I like is The Foods of Vietnam by Nicole Routhier. Both cookbooks have a lot to offer.
Ditto to javaholic. I have the same Andrea Nguyen cookbook and I find the stories sidelining the recipes add good cultural insight into Vietnamese cuisine. Highly recommended as a basis for Vietnamese recipes.
I am a Vietnamese girl here. I am so glad to see this thread to find out that many of you love my country's cuisine.
I started my blog on food and photo about 8 months ago, it is published in Vietnamese. However, recently I have started my English version of it to share the recipes of Vietnamese foods to international friends. I will be very happy to share what I know about my country's cuisine.
Below is the link to the Vietnamese cuisine category in my blog:

Regarding the topic question, I have no idea about a good Vietnamese food published in English since I've never paid any attention to this. Maybe after realizing this topic, I will be more attentive in my next visit to the bookstore.

I just got "Into the Vietnamese Kitchen" a few days ago... any suggestions on what to make first, or favorite recipes from the book?

To start, you might try the green papaya salad or cabbage chicken salad. If you have an asian market near you, look for rau ram, Vietnamese coriander. I think this herb really makes these salads. You might also try the lemongrass grilled beef or the goi cuon--salad rolls. I love anything with caramel sauce, but that's a little tricky to get right. Just skimming through the book to get ideas for you has made me hungry. Enjoy! And let us hear what you tried and how you liked it.
