What is for Dinner?
I used to belong to some very active cooking forums on Myspace. Facebook has been way too slow and I don't like the format there.
My favorite topic was always the "What's for dinner" thread. I know for a fact that all of us Daring Cooks are doing more than just one dish a month. So start posting here to share. Link your blog, post some photos, show off great restaurants, whatever you like.
This was a pork roast I did a few days ago. It is a butterflied pork shoulder, stuffed with sauteed fennel, onion, Italian sausage, and fennel fronds.

I tied it up and got it ready to roast with a bunch of quartered red onions.

Then served with roasted brussel sprouts with bacon, and mashed new potatoes topped with the pan drippings.

Tonight I did halibut with a beurre blanc, roasted cauliflower( alla Audax ), and rice. I named it, 'Too much white stuff on the same plate'. Still delicious.
I am also brining a whole bunch, like 15 lbs, of halibut in 1 cup kosher salt, 1 cup white sugar, 1 cup soy, and a gallon of water. Will put it on the smoker with alder chips in the morning.
















Robert that "Too much white stuff on my plate" sounds delicious LOL. I'm very impressed with your roast pork it looks so tasty and stuffed with fennel (one of my favourite veges) is inspired, and those roasted vegetables are spot-on. Well done on the recipe. Yours Audax.

That is right. The thing really looks so much delicious. If the dinner will always be like that every dinner will always be the one meal to wait for everyday. Even Saint Nick will not resist the temptations of such a delightful meal. I particularly love the meat and the veggies too. I will do something like that too for the Christmas eve...
