Flavor Profiling

Hello! My husband and I are in this together – we are a team in (almost) everything.

John is a pastry chef by trade and Katherine is a part time English professor, freelance writer and postgraduate student. We have a daughter who is two and who also loves to help out in the kitchen. In our (very little) free time, we love to explore farm markets, farms (we are joining a Community Supported Farm this year and are psyched!), grow our own herbs and veggies, try out new places to eat… I guess you can tell by now that our lives pretty much revolve around food! Katherine also writes fiction and if there is any time left in the day, she might be found knitting.

How long have you been a Daring Baker/Daring Cook and what’s your favorite thing about being in the group(s) so far?

We’re new to the Daring Baker/Daring Cook and we love it so far! The challenges are interesting and we really enjoy knowing there is a community working through the same recipes we are. We also love to see everyone’s photos and see how they all plated their dishes! The varieties and also the alternate bakers/cooks’ dishes are just more great things to see and learn about.

What’s your favorite kitchen gadget? How about your favorite kitchen appliance?

We don’t really use gadgets, but we love our KitchenAid and our Cuisinart immersion blender.

Are you known for making a certain dish or dessert? If so, what is it?

Katherine’s signature dishes are Italian style pink sauces for pasta and sausage and peppers. John’s signature desserts are flourless chocolate cake (the NY Times loved it!) and his cheesecake.

Is there any recipe and/or technique that we haven’t covered yet that you’d really like to make/learn?

I haven’t looked at EVERYTHING you’ve covered yet, but we’re always on the look out for a great thin-crust pizza dough! That’s one thing we have never found a satisfying recipe for.

You’ve just won $5000.00!!! What would you spend it on?

A new kitchen! For all the cooking we do, our kitchen stinks! It’s teeny and there is only ONE usable cabinet! Yikes!

What is the ultimate comfort food to you?

Katherine = gooey chocolate chip cookies and/or mashed potatoes.
John = Gooey cheese that got stuck in the pan and green bean casserole

Which season (Winter, Summer, Spring, Fall) is your favorite.. why?

Fall! We both love the Fall because of all the great veggies coming into season, the romance of leaves falling, Katherine’s birthday, and it’s when we met and fell in love!

Other than cooking and/or baking.. what hobbies do you enjoy?

Katherine likes to read, write fiction and knit. John loves to garden and play guitar and bass.

How long have you been blogging? Do you like it? What’s your favorite post you’ve written?

We’ve been blogging since January and love it! Our favorite post is hard to say, we like them all for different reasons, but our readers seem to love to read about our Butter Chicken!

What’s your favorite cookbook for desserts/baking? What’s your favorite cookbook for savory/cooking?

We use the internet and our family recipes for savory cooking and John’s been collecting recipes for baking so long that we don’t tend to turn to a cookbook very often.

Is there one food that you seriously dislike/hate? If so, which is it and why?

BLUE CHEESE! That goes for both of us; John also dislikes goat cheese and Katherine can’t be anywhere near a cucumber (but pickles are okay.)

What’s your favorite flower and/or plant?

Katherine’s favorite is a stargazer lily
John loves orchids.

Do you have a favorite local restaurant? If so, why is it your favorite and what kind of food is served there?

We don’t really live near any restaurants that we eat regularly, but we love a place called Thisilldous for breakfast! It’s in the next town over and they have creative, inexpensive breakfasts that never fail to satisfy.

Who taught you how to cook and/or bake?

Katherine comes from a long line of great cooks, and was taught by her mother.
John’s mother is not the best cook in the world, but his grandmother was, and so he sought to be as good as she was and went to culinary school.

What’s your favorite holiday and why?

We love Christmas because, as I mentioned earlier, we fell in love through the Autumn and our first Christmas was so much fun that every year reminds us of that time again.

You’ve had a rough week. How do you relax after a rough week?

Katherine loves a warm bath filled with Lush products, and John likes to pick up his guitar and jam or tend to his garden.

Where is your favorite vacation (holiday) destination?

We never go to the same place twice!

What is your favorite cooking/food related magazine? Why?

Do you have a food addiction?

I can stop whenever I want.

What did you eat for dinner last night? Did you prepare it or someone else?

Breaded, baked chicken breasts topped with eggplant, tomatoes and cheese. We made it!

What’s your guilty pleasure?

John = Oreo Cakesters (and raw bread dough).
Katherine = Chewy Chips Ahoy! But we don’t feel guilty about them.

What kind of colors do you like? Pastels? Earth tones? Brights? Neons? Etc.

We both like earth tones.

If you had the choice of a free kitchen, bathroom, living room or bedroom makeover – which would you choose and why?

Kitchen! See above…

The Martha – Angel of Domestication or Minion of Evil? Why?

Not quite an angel, but we do like her!

Do you watch any competitive cooking shows? Like Top Chef or Hell’s Kitchen? If so, which is your favorite and why?

We sometimes watch Top Chef to see how the chefs prepare the funky ingredients and we also like Hell’s Kitchen because, well, it’s so ridiculously over the top and unrealistic.

What’s your favorite “sweet” spice? How about your favorite “savory” spice?

Katherine = Cinnamon and curry blends.
John = Ginger and black pepper.

If you could eat in any celebrity chef’s restaurant which restaurant would it be, and which chef owns it?

Lupo, Mario Batali

What’s your favorite herb to cook or bake with? Do you prefer fresh or dried?

Katherine = Basil, fresh!
John = Thyme, fresh from the garden.

Just curious- where do you live – I see the Wegman’s notation. I live in Fredonia NY and my daughter lives outside of DC. I know that is as far South Danny Wegman has built stores.

We live in NJ, but travel to the Wegmans just a few miles away in PA.
