Biscuits and Scones
Thank you so much for such a wonderful challenge!!! I love biscuits and scones but have always been too intimidated (or lazy) to make them.
This month, I tried making a savory and sweet version of the recipe. For the sweet "scones", I added a heaping tablespoon of sugar and 1/2 cup of dried cherries that were rehydrated in amaretto. I brushed these scones with milk and sprinkled with turbinado. The flavor of these scones was incredible, but I burnt the bottoms. =(. I used the knead method. I may have underworked the dough. I'll definitely work on my technique.

For the savory batch, I doubled the salt in the basic biscuit recipe and then added a bit of cracked pepper and 1/4 cup of dried asiago. I was nervous that the asiago would make the biscuits salty, but they weren't. Next time, I'll go for the full 1/2 cup of dried cheese. On this batch, I also lowered my oven by 25F degrees and changed pans. This temperature seemed to work, but the pan was not non-stick so the biscuits stuck a bit. Next time, I'll use parchment paper.

Again, thank you for such a wonderful challenge. I will never eat the mystery grocery store refrigerated section or Biscquik biscuits again.
