February Tiramisu

Boy what a challenge! I decided to make the Tiramisu in 3 steps. First day: Mascarpone, Zabaglione and the 'nilla pastry cream. Everything turned out except the cheese. I didn't have a thermometer so I eyeballed everything....big mistake. Second day: Lady fingers. I was a bit intimidated by the egg-whites and folding everything in, I was worried that the batter would deflate with too much of my handling. It actually turned out pretty good. Once piped they looked perfect on the tray and ready for the oven. Well... I think I had my bottom rack one slot too low and the bottom pan lady fingers all burned : ( The top tray fingers however, turned out perfect!! Third day: Whipped cream and assembly. Unfortunately I had to use store bought mascarpone and one package of ladyfingers (too supplement the ones that burned. In the end, I had a bit of ladyfingers and Masca-Zaba-cream left over for two individual servings. My husband wishes I had used rum extract, I should have added kahlua! Maybe next time.

This was a great challenge, but I thought it was one too many steps/recipes. Being this my first bakers challenge, I still think I did really well.
