January challenge Scones
January challenge was hosted by Audax. Audax sifted through hundreds of recipes to come up with the perfect combination for fluffy scones.
Afternoon tea is one of my favorite rituals, so much so, that for my birthday I organized an afternoon tea with all the traditional items: scones, sandwiches, tea. The recipe I used until now was from an old cookbook, called The Dairy Book of Home Cookery thqt has about the same igredients and proportions and Audax's recipe:
200g self raising flour
50g butter
25g sugar
125ml milk
but by using the method in this book I obtained quite biscuity scones.
I decided to follow the instructions from Audax ad literam and I was rewarded with very high, fluffy soft scones that were just as nice next day for breakfast. The effect was so spectacular that they were closer to sponge than to scones, so next time I might cook them a tiny bit longer to get them a little crunchier. I did some plain ones and some with home candied orange peel. As my mother-in-law said it, there is no need to change perfection, the best ones were the plain ones with butter and jam. I tried with honey, but it's not quite the same.
However, out of all the scones I've tried to date the only one nicer were at the Westin in Dubai, so Audax really did a fantastic job of writing down fool proof instructions. Thank you very much, Audax, really appreciate it!
