Four days late - this month's challenge really got the better of me in terms of making time to get every component done. Better late than never!

The marscapone was easier than I expected however there was no whey after straining. Perhaps this was because I didn't have any muslin and used calico instead or because I cooked it for too long - I'm not sure. My savoiardi biscuits turned out perfectly and were the highlight of the challenge. The perfect combination of sponge and crispy exterior.

The zabaglione and pastry cream also worked well and I love the hint of lemon in the pastry cream.

Due to late nights at work, it was a rush assembly job so doesn't look anything special but it tasted delicious!
