- 2 eggs
- ¼ cup brown sugar
- 1 cup sweet potato mash
- 1 cup almond milk
- 1 tsp vanilla extract
- 1 tsp cinnamon
Preheat oven to 350F.
In a mixing bowl, with an electric mixer, beat eggs until fluffy. Set aside.
In a separate bowl, whisk sweet potato mash, and brown sugar. Add vanilla and cinnamon.
Pour in milk and whisk until smooth.
Add eggs and whisk until combined.
Pour the mixture into the ramekins.
Place the ramekins on a baking sheet. Pour around 1-inch of hot water.
Bake the pudding for 15 minutes.
Serve topped with whipped cream.
