Sweet potato pudding

Ingredients

  • 2 eggs
  • ¼ cup brown sugar
  • 1 cup sweet potato mash
  • 1 cup almond milk
  • 1 tsp vanilla extract
  • 1 tsp cinnamon

Instructions

  • Preheat oven to 350F.
  • In a mixing bowl, with an electric mixer, beat eggs until fluffy. Set aside.
  • In a separate bowl, whisk sweet potato mash, and brown sugar. Add vanilla and cinnamon.
  • Pour in milk and whisk until smooth.
  • Add eggs and whisk until combined.
  • Pour the mixture into the ramekins.
  • Place the ramekins on a baking sheet. Pour around 1-inch of hot water.
  • Bake the pudding for 15 minutes.
  • Serve topped with whipped cream.
