Fresh Spinach Omelette
Eggs whisked together with heavy cream and salt are poured over sauteed spinach and topped with parmesan cheese to make an omelette that is so light and fluffy!

2 eggs 1 tbsp heavy cream ¼ tsp salt to taste 1 tbsp butter 2 cups spinach fresh 1 tbsp parmesan cheese freshly grated
Beat eggs with heavy cream and salt in a mixing bowl.
Mix until well blended.
Heat butter in a skillet over medium heat. Add spinach and cook until just wilted.
Pour the eggs over the spinach and cook them, without touching for 2 minutes.
Sprinkle the parmesan on top. Fold the omelette in half.
Serve warm, with fresh bread and some tomatoes.
