- 1.5 lbs pumpkin
- Olive oil as desired
- Salt if you want to use the puree just for savory meals
Heat oven to 400F. Line a baking sheet with parchment paper.
Cut the pumpkin in half, if you are using a smaller one, or into wedges if you have a large pumpkin.
Scoop out the seeds.
Brush the pumpkin with some oil.
Place the pumpkin cut side down on a baking sheet.
Bake the pumpkin until soft, for 45-60 minutes.
Scoop out the flesh.
Place it in a food blender or processor.
Process until smooth
