Ingredients

  • 2 tbsp lemon juice
  • 1 tbsp agave syrup
  • 1 tsp salt
  • ¼ cup extra-virgin olive oil
  • 4 cups fresh arugula
  • 2 cups watermelon
  • 1 small onion thinly sliced or shallot
  • 2 oz. Feta cheese

Instructions

Make the Dressing

  • In a small bowl, whisk lemon juice, agave syrup, salt, and extra-virgin olive oil.

  • In a large bowl, toss together arugula, watermelon, and sliced onion. Drizzle over the dressing and stir to combine.
