This is

NOT

a Daring Bakers challenge.

This is a separate competition that The Daring Kitchen is hosting along with the New York Cake Convention and The U.S. Confection Connection.

The Daring Bakers challenges aren't competitions.. we're more about a learning and supporting each other type group. Smile

Thanks for writing, hope this clears up any confusion. Welcome to The Daring Kitchen Kokken69! Smile

Autumn to me means the change of colors. I love how the fall foliage changes to these different hues and it let's you know the holidays are coming.

The process was smooth for me since I started making my tree branches and fence pieces as soon as I saw the contest. The branches and fence pieces are made with Nicholas Lodges' gumpaste and were allowed to dry before I painted them with gel paste and vodka.

The cake is a pistachio cake that I adapted from Martha Stewart's Yellow cake recipe. I used homemade fondant flavored with pistachio extract and all the leaves are made from this. The tree trunk was made from modelling chocolate so it could hold up the branches.

Thanks for looking.

Thanks Devona! I've added your contact information to our files for the contest but I removed your personal information from this post for privacy purposes.. sorry for the mistake in the rules. Lis xoxo

Hi all,

Here's my non-North American entry (but I wanna go to Noo York!!) Smile. It's called Blue Magic because I find the colours of Autumn really magical. And in Australia, crisp Autumn days bring with it clear blue skies that seem to stretch forever. You can read more about the whole process when I post it up on the blog soon.

Three photos:
one of your undecorated (no frosting, no fondant) cake base, one of the partially decorated cake, and one of the final result.

The cake base - a stack of three home made 9"cakes flavorued with cinnamon and nutmeg - flavours I associate with Autumn. It's sandwiched with maple buttercream.

Covering with fondant/ready-to-roll icing. Didn't have any actual photos of myself decorating this because hubby was at work and no one else at home to handle the camera Smile. There's my arm reflected in the spoon though!

All done. I made every single leaf myself out of modelling paste mixed with fondant. The cake is painted using a a mix of Wilton SKy Blue paste colour + vodka. The tree is modelling paste + fondant as well.

Cheers,
Sharon Raj,
Thanks Sharon! I've added your contact information to our files for the contest but I removed your personal information from this post for privacy purposes.. sorry for the mistake in the rules. Lis xoxo

I'm not sure, but I know lots of decorators that do it that way so I figured it must have some purpose. I know with luster dusts it is good because it will evaporate, so maybe it's the same for the gel paste.

@ Deeva, You are right about the evaporating. Vodka dries much faster so the painting or color has no time to 'run'.

Here is my entry --

Its a Sour cream pound cake baked from scratch, with a chocolate ganache filling and covered in buttercream.

Me, decorating the cake, well almost done since I couldn't wait till hubby got home and took a pic....! He took a pic moments before I finished.

And the finished cake - "A Splash of Color". Autumn always brings to my mind two things, colorful leaves and Halloween. Kids dressed up in cute costumes going trick or treating on a chilly autumn evening, is a sight to see and makes me smile. So I decided to put these two aspects together on my cake. All decorations - leaves, babies, pumpkins, apples are made out of a fondant-gumpaste mix. It was a whole lot of fun making this cake since it was my first with an Autumn theme. I made all the sugar decorations earlier this week. Baked, assembled and decorated the cake today.

More pics here - which shows the decorations up close: http://picasaweb.google.com/sweetnams/AutumnCake#

Thanks for looking!

Here's my daring baker cake challenge, 'Squirrel Scene'! I'm really annoyed with myself for not getting the completely 'naked' cake, I hope the crumb coating is enough for you to see that it is cake underneath Sad

I made Rose Levy Berenbaum's Pumpkin cake with walnuts and burnt orange silk buttercream. The flavor was wonderful but the buttercream was a very involved recipe, creme anglais and a meringue!!

The buttercream was a little difficult to work with, so instead of a light sprinkling of autumn foliage, I decided to cover it with leaves, which I cut out of fondant. I made my little squirrel out of homemade chocolate marshmallow fondant, hence him being a little squat!

Here I am adding the finishing touches of a little sparkly dust suspended in cheap gin, which gave a lovely sparkle and shine!!

Thanks so much for a great challenge, I'd love to go to New York. I'll send my address to the organisers since its really not safe to share addresses on an open forum like this. Thanks!

Hi Daring Friends...
Daring is the right name, at least for me. This is my first time ever using fondant. I made fondant and gum paste. The fondant and gum paste was all white so I hand painted everything. I almost decided not to enter - but then I reasoned - its "Just Cake" ; ) . I know I'm no master, but, I do love cake and I want to learn this craft. I want to make people happy, you know, have your cake and eat it too~~
'AUTUMN ESSENTIALS" to me is all about color and emotions. Fall is the most wonderfully warm season to me. Its a time to reflect and remember we are all just people who are trying to be happy and live life as fully as possible. Family and Fall - Like Bees and Honey - Its Just Right!
I would love to go to NY and meet Michelle - I'm already a Fan of hers. I love how she really tries to get to the heart of her clients to make magic happen and she does!
Warmly Taffy~~
(my personal contact info will be emailed to you ; ))

Hey there... I baked a cake & decorated it, everything from scratch. I lloved doing this, even though I know I don't qualify as I don't live in the States/Canada.

Have got my Cinnamon Buttercream Autumn Cake posted over at my blog, with a teeny video too http://www.passionateaboutbaking.com/2009/11/cinnamon-buttercream-autumn...

Here is my chocolate cake before I trimmed it up.

Here I am working on the cake, half-way finished.

And here is the completed cake...side view

and top view/leaf close-up.

This is a chocolate cake with mango preserve filling in the center. Mango jelly was used as a crumb-coating and then semi-sweet chocolate ganache was poured on top. The bottom edge is lined with pecans and the top is decorated with chocolate leaves. I used white chocolate and added food coloring to get the beautiful fall colors.

I call my entry "Fall Flare". I was inspired by the beautiful fall foliage that's just now coming into full bloom in South Carolina. Despite the never-ending battle with the trail of dead leaves constantly making their way into my house, I love the beautiful rich fall tones of brown, red, orange and yellow that signal the start of the Holiday season. The pecan edging was added to give it a little Southern flare.

This is my entry for the cake competition.

My inspiration:
Autumn is symbolized by leaves for almost everyone, but what makes the season truly wonderful for me is the experience of being out in the elements. Taking a walk on a crisp foggy morning through a technicolor shower of leaves as they fall from the turning trees above. Kicking through the crunchy leaves below and picking up a few to discover that each one is breathtaking in its beauty and design. I wanted to recreate this magical experience with this cake.

The process:
As a graphic designer, I started this cake on the computer to determine scale and colors. I started making leaves out of gum paste and painting them with gel food coloring about a week prior to the cake. The next step was making the tree trunks and branches out of gum paste and leaving them to dry. The cake itself is a box mix frosted and layered with standard buttercream frosting. The cake was then covered by fondant. The trees and leaves were assembled using royal icing to make a sturdy adhesive.

Basic box mix white cake
Applying rolling hills to the cake, all covered in fondant.
The finished cake.

I have titled my entry: Seattle Fall. I wanted to decorate a cake which reflected the Fall season here in Seattle. All over the city there are leaves in hues of purple, brown, red, orange, yellow, and green; they are covering yards, sidewalks and streets. It's quite beautiful - especially the various types of Maple trees that change colors. What I love the most about Fall are the stark contrasts among the various leaves. I was inspired to re-create these leaves to look as realistic as I could.

I baked a two layer 9" chocolate cake, filled it with caramel sauce, and frosted it with ganache. I then used both chocolate fondant and gum paste leaves to decorate the cake using cookie cutters. With both types of leaves I made a leafing/vein impression by rolling the fondant/gum paste leaves on the back side of an actual leaf.

With the gum paste leaves, I set them on a crumbled piece of foil to dry. This way each leaf would have a random look, such as curled edges, similar to the way leaves naturally look on the ground. I used "AmeriColor #135 Gold" colored gel paste to slightly tint the gum paste as a base. From there I used "CK Chartreuse, Red Terracotta, and Sunflower" colored pedal/luster dust with vodka to paint each one.

For the actual decorating I symmetrically lined chocolate fondant leaves as a border and covered the top part of the cake with the gum paste leaves.

The final outcome was a stunning and beautiful Fall decorated cake. My daughters thought the leaves were real and asked if they could take them to school for show and tell.

Thank you for hosting such a great challenge! I plan to write a post about how to make the gum paste leaves on my blog soon and will post back here when I do with a link.

-Alice

*Ok, I just posted a link with more pictures and how to make the gum paste leaves I used on this cake. The post can be found here.

Wow! What a challenge. I stewed for days trying to figure out what I would do and wether or not I should enter. I'm so new at cake decorating that I wasn't sure if I would have enough skills to be able to pull anything off. Lately I have become so fascinated with cake decorating hoping that maybe one day I might actually do it for a living. There are so many things I learned while making this cake. Many of the techniques I used were done for the first time so it was a little bit of trial and error. I'm so happy I went through with it and did the best that I could do.

Here is my somewhat not iced cake. I forgot to take a picture of it with absolutely nothing on it. The filling covers a lot of the sides.

Here I am putting chocolate on the back of the salal leaves. I've already poured the ganache over the cake and you can see the spun sugar on the pole beside me waiting to be shaped.

My finished cake was named "Windy Days". Autumn brings to mind windy days blowing colorful leaves off the trees. So I made some spun sugar to represent the wind and placed some chocolate leaves on the cake to show them being tossed around.

Going to New York would be a dream. Especially going to the cake show. I have always wanted to attend one and can only imagine being inspired by so many wonderful designs. Thank-you for the chance at such a great opportunity.

Ok, so I only looked at this post about 3 days ago and went "Oooo!". Autumn is by far and away my favorite season, so this is so awesome. When I think of autumn, I think of beautiful, colorful, crunchy leaves (crunchy is required for stepping on), and... turkeys. Yes, Autumn makes me think of turkeys. I call it... "Hide and Turkey".

So, for some naked-ness.

And one of me smoothing the fondant. I have no table, so it was hard for my mother to take my picture while working, as I had to do everything on the counter.

And my finished cake!

I love turkeys.

I had so much fun making the leaves... breaking some leaves, and making my tiny, disproportionate turkey.

Autumn means so many things to me, but the most important of them all is family. As a Chinese-American, the welcoming of autumn begins with the Mid-Autumn Festival, which was celebrated on October 3rd this year. When I was a child, I never quite knew what the festival meant other than burning incense and eating mooncake. But on a trip to China this summer to visit and meet my relatives for the first time (my parents are the only ones from their families to immigrate), I've come to realize just how important and special this festival is. It's a time to celebrate a successful harvest, admire the bright moon, and gather together as a family.

So in honor of my family, I created "Mooncake" in hopes that they know I am celebrating this wonderful season with them even when we are miles apart.

There she is in the buff: a devil's food box cake to be filled with chocolate buttercream.

Here I am working on the design. The cake is covered in an actual mooncake dough (although I had to alter the recipe a little to make it work) instead of fondant so that I could bake it to get the correct coloring. The designs are from the same dough and go down the side of the cake. I hand rolled strips and shaped each piece which were glued onto the cake with an egg wash.

The completed "Mooncake." I chose chrysanthemums to decorate the cake not only because they are known as the "autumn flower" for flourishing in cold weather, but also because their name in Chinese 菊 "jú" means "gathering together."

The Chinese character in the upper right, 秋 "qiū" means "autumn." I brushed it with a mixture of orange food coloring and egg wash so that it would pop out from the rest of the designs. A cup of Jasmine tea is served alongside to complete the traditional dessert of the Mid-Autumn Festival.

Happy autumn everyone!

The name of my submission is Fall Fun. Growing up we loved to rake big piles of leaves and jump right in and hide under them and just play. Of course, everyone knows that "orange" is the unofficial color of autumn ;o)

I was born and raised in Canada but now live in NC, USA. I became a US Citizen one year ago this week. I was confirmed in Raleigh, NC. Raleigh is called The City of Oaks. My inspiration came from my playful childhood memories and my new adult memory of my dual citizenship. I combined the leaves from Canada (maple) and Raleigh (oak leaves and acorns) on an orange fondant covered cake to create my Fall Fun submission.

Yes, the acorns are edible. My son woke up and asked why I had acorns with my leaves. He couldn't believe they weren't real. He was excited to learn that he could eat one because they are made from fondant. I combined colored fondant and rolled it out to create the fall colors in my leaves and let them dry over foam pieces to give them shape and movement. I then brightened up some of the colors with powder food color and pearl dust.

Autumn Breeze

My favorite thing about autumn is the color. I love how the vibrant oranges, reds, and yellows of the falling leaves mesh with the rich browns and vibrant greens other plants in various states of life. While the chill in the air isn't always my favorite (I live in Michigan), I wish that I could be surrounded by all of these beautiful warm colors year round.

pumpkin spice cake with maple buttercream.... fall flavors are pretty amazing as well... and I had plenty of scraps Smile

I carved the cake into a cascading pattern to evoke the haphazard beauty of autumn leaves blowing in the wind.

This challenge was so much fun Smile

Okay I am a little embarassed to post mine with all these fabulously stunning cakes.

Pomegranates are something my father bought every Fall, just before Thanksgiving. So while it says Fall to me, it may not be speaking Fall to everyone else but I will go ahead and share it anyway.

Clearly I need to up my skills.

My entry is called Autumn Bliss. When I think of autumn I think of a brisk wind, leaves falling faster than you can rake them up, and children taking advantage of the piles of leaves. This decoration shows two boys taking a break from raking leaves to climb and play.

Here is the cooked cake, unfrosted (it is pumpkin spice flavor):

Here is the frosted but undecorated cake (I used cinnamon cream cheese frosting):

Finally, here is the finished cake! I used rice crispy treat to form the tree and covered it with gumpaste. I made the characters, pumpkin, rake, and leaves all out of gumpaste as well:

Thanks for the exciting contest!

For me, Fall starts with our annual Octoberfest parade. The kids not only look forward to all of the floats, bands and characters but also the first hot chocolate of the season. And what better way to try to win a trip to the Big Apple, I thought, than making a big cup of hot chocolate and big Oreo cookie. Here's my entry called "Saturday morning in October".

I started with my 9" cake on top of a dummy and covered both in fondant. Milk chocolate frosting became the cocoa and regular sized marshmallows became the mini marshmallow topping. Cheers!

I've decided to take a shot and participate. Maybe I'll get lucky and my dream to attend a cake convention and learn things from other incredible people will come through, and I've never been to a NY City. So this would be a double excitment if I win!!!

I love autumn. My birthday is in November as well. I love colors that the season bring: greens, yellows, browns, reds. and just the smell of earthy weather. Every morning on a way to work I pass some beautiful sceneries and enjoy the view of God's colorful creations.

I was born and grew up for the first half of my life in Ukraine and during the fall we all aniticipated the birds to start leaving their nests and migrate to warmer countries for the duration of winter. Almost every year we had a new nest on our balcony, and even though we tried not to disturbe the birds we were happy we had them and watched them every day, and there was a bit of sadness on a day when birds would leave for the end of the autumn and the whole winter.

The name for my cake is ""Fall"ing Colors".
I chose to work with a dummy and decorated everything with fondant. Used Williams-Sonoma pie crust cutters for leaves and everything else is shaped with hands.

This was a fun challange to participate in. Thank you Lis and Ivonne.
Can not wait to hear who's the winner!
