Hi my name is Nicolas but everybody calls me Nico, except when they are mad at me - pretty frequently
I’m from Argentina, a beautiful country full of fantastic places and very friendly people, unfortunately we also have politicians, but that is another story. I have been living in Houston, Texas for 6 long summers, I mean years, I think those words are exchangeables here. I got a MSc in Molecular Biology and now I’m working full time as a Sr research assistant at MD Anderson Cancer Center, one of the best cancer centers in the world (to get treatment, not to work for). I discovered my passion for cooking when I went to college, before that I never cooked, my mom is an excellent cook so I never had the necessity to cook. I got tired of science a few years ago so I started to think about changing careers, last year I finally got convinced that I should do something related to cooking, all my friends told me I should go that way because I’m very passionate about cooking and baking, and that is true, I love to cook and bake. I started culinary school last September, I’m in the pastry and baking program and I’m loving it. My plans are to go back to Argentina in a couple of years and open a pastry shop with some artisan bakery on the side.
Finally I should tell you that I’m happily married and have a 12 years old boy and another one is coming is a few days.
How long have you been a Daring Baker/Daring Cook and what’s your favorite thing about being in the group(s) so far?
I joined the group in February, so I’m pretty new. The thing I like the most is the fact that I have to cook/bake a different dish every month. Some times the dish is totally new to me some times it's not, but I enjoy it either way.
Are you known for making a certain dish or dessert? If so, what is it?
My signature is the pizza, that is my best. Then I’m pretty good on doing homemade pasta.
You’ve had a rough week. We feel your pain. How do you relax after a rough week?
A glass of red wine, some cheese, a movie and ice cream
What is the ultimate comfort food to you?
A very nice sandwich will make it
Where is your favorite vacation (holiday) destination?
I love to go to playa del Carmen (mexico) and enjoy and also an all inclusive resort, I love that.
What’s your favorite cookbook for desserts/baking? What’s your favorite cookbook for savory/cooking?
The books I use the most are On Baking (by Sarah R. Labensky, Eddy Van Damme, and Pricilla Martel) and On cooking (by Sarah R. Labensky, Alan M. Hause, Steven R. Labensky, Pricilla Martel) those 2 books rock!!!!
I also love Bakewise (by Shirley O. Corriher), and the Bread Baker's apprentice (by Peter Reinhart)
What’s your favorite kitchen gadget? How about your favorite kitchen appliance?
My favorite kitchen gadget is my scale, my breads and pastries are much better now that I weight everything. For the appliance I have to go with my cuisinart stand mixer, I discovered a whole new world with that machine.
