Tiramisu

I made a pomegranate and nutella tiramisu. I added the nutella to the custard and dipped the lady fingers in reduced pomegranate juice. I also used the juice in the first custard. It turned out really good. I topped it with toasted hazelnuts and chocolate covered pomegranates and a pomegranate reduction. Everyone really liked it for something different than the traditional. I loved making the cheese and am excited to try others. I found a local dairy where I got the cream and have gotten more to make my own ricotta and some flavored butters (that was fun and soooo yummy). Super excited about that. Thanks for this choice I'll make it again.

Tiramisu - a tad late!

Four days late - this month's challenge really got the better of me in terms of making time to get every component done. Better late than never!

The marscapone was easier than I expected however there was no whey after straining. Perhaps this was because I didn't have any muslin and used calico instead or because I cooked it for too long - I'm not sure. My savoiardi biscuits turned out perfectly and were the highlight of the challenge. The perfect combination of sponge and crispy exterior.

The zabaglione and pastry cream also worked well and I love the hint of lemon in the pastry cream.

Due to late nights at work, it was a rush assembly job so doesn't look anything special but it tasted delicious!

February- Tiramisu

This recipe is divine. I had so much fun creating the finished product, and my husband has a new favorite dessert. I decided to make a big Italian Sunday dinner with my scratch lasagna and tiramisu with some loved ones and it wsa a huge success. This recipie is going to become a staple for us.

Tiramisu - February 2010

I only got a chance to put my tiramisu together on the reveal date because I have had a very busy month .But better late than never!

I have made tiramisu a number of times in the past, which has included making mascarpone. In the past I have used Christine Manfield’s recipe in Paramount Desserts (still just about my favourite dessert recipe book of all time!). The challenge recipe was a bit easier, I thought; at least in so far as I didn’t have to go out and buy citric acid! I love zabaglione, so it was great to set it incorporated into the challenge and luckily there was an unopened bottle of Marsala in the cupboard!

February Tiramisu

Boy what a challenge! I decided to make the Tiramisu in 3 steps. First day: Mascarpone, Zabaglione and the 'nilla pastry cream. Everything turned out except the cheese. I didn't have a thermometer so I eyeballed everything....big mistake. Second day: Lady fingers. I was a bit intimidated by the egg-whites and folding everything in, I was worried that the batter would deflate with too much of my handling. It actually turned out pretty good. Once piped they looked perfect on the tray and ready for the oven. Well... I think I had my bottom rack one slot too low and the bottom pan lady fingers all burned : ( The top tray fingers however, turned out perfect!!

Tiramisu Adventures

Not exactly sure what happened to my reveal last night, still learning how to post I guess. My mascarpone had the same trouble as others, or maybe I should say I had the same troubles, wasn't exactly sure how to tell when the cheese had curdled without the normal signs of curdling, and, my temp never got to 190 even though using a stainless steel bowl. Ladyfingers turned out well, other than my overfilling my pastry bag and having batter coming out of both ends. Just had to refill my bag. I am not a coffee drinker, so probably would not have made this on my own. It was fun and I am inspired by the other's variations. Will definitely have to revisit with the adaptations. Thanks for the challenge.

Tiramisu Adventures

As it seems with many of the folks, my mascarpone was an adventure in trying to figure out when it would curdle without the tell-tell signs of curdling, and the temp not getting where it needed to be. Lady fingers were easy, except that I filled the pastry bag too full and then had batter coming out of both ends. I am not a coffee drinker, so this challenge was something I would not ordinarily have done. Thanks.

Tiramisu

I enjoyed making this month's challenge as Tiramisu is one of my favorite desserts. We enjoyed this delectable dessert although it could stand a little more time in the freezer. Thank you Deeba and Aparna!

Tiramisu

My tiramisu was outstanding!!! It was quite a bit of work though. I followed directions and most went as described. However, in making the mascarpone, I could not get the cream mixture over 175 degrees. After waiting over 49 minutes (directions said it would take about 15 minutes), I took it off the simmering water and placed the cream in a small saucepan and placed directly over the heat. Once I did that, the rest of the way went well. One other small problem was that my electricity went off twice in the 15 minutes it took to bake the savoiardi. I lost track of the time, but guessed. One tray was perfect, the other got a little too browned on the bottom. In spite of these problems, the final product was wonderful.
