Biscuits and Scones

Thank you so much for such a wonderful challenge!!! I love biscuits and scones but have always been too intimidated (or lazy) to make them.

This month, I tried making a savory and sweet version of the recipe. For the sweet "scones", I added a heaping tablespoon of sugar and 1/2 cup of dried cherries that were rehydrated in amaretto. I brushed these scones with milk and sprinkled with turbinado. The flavor of these scones was incredible, but I burnt the bottoms. =(. I used the knead method. I may have underworked the dough. I'll definitely work on my technique.

January challenge Scones

January challenge was hosted by Audax. Audax sifted through hundreds of recipes to come up with the perfect combination for fluffy scones.
Afternoon tea is one of my favorite rituals, so much so, that for my birthday I organized an afternoon tea with all the traditional items: scones, sandwiches, tea. The recipe I used until now was from an old cookbook, called The Dairy Book of Home Cookery thqt has about the same igredients and proportions and Audax's recipe:

200g self raising flour
50g butter
25g sugar
125ml milk
but by using the method in this book I obtained quite biscuity scones.

Thank you Audax! This really was a fabulous challenge. I make scones all the time and thought I perfected my recipe but I enjoyed the experiment immensely and have concluded that this recipe is the best one yet. Perfect scones, easily scalable and lots of fun. A great success!!

Tamales

I've made tamales before and they are a lot of work but so rewarding at least to me. i did shredded beef with red chili sauce and chicken with green chili sauce. I also did a desser one with dried fruit and white chocolate which I hadn't done before it was tasty. thanks for thechallenge.

Scones Galore!

I have to admit I was sort of . . . meh about this challenge. I thought scones were a little bit boring, and having watched my mum make them growing up, I even had the arrogance to think they were easy! But this challenge really was challenging.

I made three versions of the scones over the past three weeks. The first were the originals, and they were pretty flat:

I must confess that I have always been lazy to what comes to scones. I used to do the dough in the thermomix and I must reassure you that the results are nothing alike. I used the Basic Recipe as provided by Audax and I’m very happy with the final result.

Char Sui Bao

I have never had Char Sui Bao before. I was kinda surprised cause i've had a lot of Dim Sum. These were really fun to make and so tasty. I liked them both but the steamed were my favorite. My son kept stealing the pork as I was trying to dice it up. He wanted that alone. Needless to say I will be making again. I took some over to my Chinese neighbors and they loved them as well since they make them too. Thanks for the the great recipe.

Sour Dough Bread

I love sour dough bread and have made it a lot. I always have sour dough starter on hand. This time I made sourdough ciabatta bread. I also made sour dough english muffins. They both turned out great.

Sans Rival

I was pleaseantly suprised by this cake. I'm not a huge fan of meringue but I really liked it and anything wiht nuts I'm all over it. I loved the flavor and textures so did my family. Thanks for the chance for me to try this.

Povitica

Yum this bread was Delish and so pretty to look at. I actually really enjoyed making it and we made decadent french toast out of the leftovers.
